Cafe Mocha Cream Cupcakes

I wanted chocolate!  I wanted coffee!  I needed to use up a container of whipping cream that I thought I needed for another recipe but I didn't...  So, I came up with THESE! 
WOWZA!!!!
These were too good not to share.

Make your chocolate cupcakes.  I just used the basic chocolate cake recipe from my handy dandy Betty Crocker cookbook.  I love that book. 

Make sure your cupcakes cool completely.

Then, whip up your whipping cream.  Pour heavy whipping cream into COLD stainless steel bowl and whip vigorously by hand or using a mixer.  I used my mixer...so much less muscle needed : )
HERE are more specific directions. 

Put the whipped cream into a pastry bag with a small-medium size tip. Poke the tip into the top of the cupcake and squirt a small amount of whipped cream into the cupcake.  Don't worry about the hole you just made in the top of your cupcake, the frosting will cover that up.

Make your frosting:  MMM!
Coffee Buttercream Frosting
Mix together:
16 ounces of powdered sugar
3/4 stick of butter
1/3 cup of COLD coffee
1/4 teaspoon of vanilla extract
*NOTE* You may need to adjust the amount of powdered sugar to get the right consistency.  I usually end up adding a bit more to stiffen it up.

Spread your frosting onto your cupcakes--or use a pastry bag to squirt it on.

Make your melted chocolate drizzle:
Chocolate Drizzle
In a small, microwave safe bowl, put:
1 cup of semi-sweet chocolate chips
1 T. shortening
Melt together making sure to stop microwave and stir frequently.

Pour melted chocolate into a pastry bag OR a plastic storage bag.  Cut a SMALL opening in the corner of the bag.  Squeeze out the chocolate drizzle onto tyour cupcakes. 

ENJOY!
*NOTE*  because of the whipped cream filling, you probably want to keep these refrigerated.

I want to add instant coffee crystals to the whipped cream, let it sit and then whip it up and fill the insides!!!!! MMMMMMMMM!!!!!!!!!!!!!!!!!!!!!!!
