A Most Delicious Breakfast!

Yesterday, I wanted to use some of the FRESH raspberries we got at the farmer's market.  The result was too delicious not to share with you.  
 First, Start the Oatmeal Pancakes!
Soak 2 cups of old fashioned rolled oats in 1 cup of buttermilk for about 15 minutes.
*if you don't have buttermilk on hand, like I NEVER do, put 1 T of sour cream in your measuring cup and then add milk to equal 1 c.  OR you can make sour milk by using vinegar instead of sour cream.
Add 2 eggs
1/4 cup melted butter
1/2 cup all-purpose flour
2 T white sugar
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
and Stir it all together
The batter will be really thick!
Make smallish size pancakes...big ones are REALLY hard to flip.
They should cook slowly over medium heat.  It takes a lot longer than regular pancakes, but believe me, IT'S WORTH THE WAIT!!
While they are cooking, you can make the raspberry sauce.
* This works with pretty much any berry.  I like using this for blueberries too.

Cook on low heat:
1 heaping cup of berries
1/2 cup sugar
1 cup water
1 T butter
and a thickener:  a couple T of cornstarch or a few T of flour
It looks kind of gross at first:
But soon, it looks like this:
If your like me, seeds can take away from the joy of raspberries, so, I went ahead and stirred them through a strainer.
Now, pour that luscious sauce over the oatmeal pancakes and you will be in heaven!

Today, we ate the left over sauce over waffles...also very delicious. Now the sauce is gone :(
